Onion quiche

I made a different mix for the base, and it worked out sooooo good!

I hope you can use it for other quiches.

BASE:

  • 1/2 cup of Teff flour

  • 3/4 cup of buckwheat flour

  • 3 tbsp. of ghee

  • 1/2 cup of room temperature water

  • himalayan salt

FILLING:

  • 4 red onions (you can use white onions)

  • 1 cup of chopped mushrooms

  • 2 eggs

  • ghee, salt and pepper.

  • 2 tsp. of curry powder

  • herbs (oregano thyme, coriander)

  • 1 tbsp. of tahini (optional)

  • feta cheese (optional or swap for parmesan).

STEPS:

  1. In a bowl mix all the ingredients of the dough and join with your hands to form a bun. (you made need to water your hands as it can be sticky)

  2. Line a previously oiled pan with the dough.

  3. Bake at 180C for 15 minutes.

  4. Peel and cut the onions. Stir fry with ghee and herbs.

  5. Cut the mushrooms, and stir fry with ghee and a splash of tamari or soy sauce if you have.

  6. Reserve and wait for it to cool down.

  7. Mix the onions with 2 eggs, season with salt, pepper and tahini (optional) and add the feta cheese chopped.

  8. Dump on the pan and return to the oven for 25 minutes at maximum temperature.
