Cauliflower pizza

Vegan (Mini) Cauliflower Pizzas are a great option for a low-carb side dish, a healthy snack or delicious lunch.They are easy to make and gluten-free. I am always looking for ways to sneak as many vegetables as possible to my kids diet and these pizzas are just perfect for this purpose.

If you would like to add an egg to the dough you can deff do so! and also cheese as a topping.

INGREDIENTS:

For the Dough:

  • 1/2 head of cauliflower, crushed

  • 1/4 cup or 40 g of ground flaxseed

  • 1/8 cup or 25g sesame seeds

  • 1 garlic (or 2 if you are a fan like me)

  • 1 big tsp of dry herbs like oregano and thyme

  • 1 tbsp of nutritional yeast (optional)

For the Toppings:

  • 1/4 cup or 50 g home made tomato paste

  • sliced cherry tomatoes

  • 1/2 cup or baby spinach or basil

  • shredded parmesan cheese (optional)

STEPS:

For the dough:

1. You are going to wash the cauliflower and mash (or process) it until it is very fine.

2. On the other hand, combine ground flaxseed with sesame seeds and 1/2 cup or 125 ml of water in a food processor and the nutritional yeast garlic and herbs.

3. Combine the cauliflower with the pasta you just made.

4. Spread the cauliflower dough on a baking sheet and make the shape of the pizza. (minis or one big)

5. Heat in an oven at 180 *C for 15 minutes.

Toppings:
6. On top add the tomato paste, spices and the rest of the sliced ​​tomatoes, black olives, or any other veggies you like!

7. Reheat in the oven for 10 to 12 minutes.
