Hummus

INGREDIENTS

• 1 cup Chickpeas: Make sure they are rinsed and drained and soaked overnight!

• 1/2 Squeezed Lemon Juice: Go for freshly squeezed juice.

• 3 Garlic Cloves: Roughly chopped.

• 1 Tbsp. Tahini: This gives the hummus it’s distinct earthy flavor.

• 2 Tsp. Ground Cumin: A nutty, spicy taste with somewhat bitter undertones and a warm, penetrating aroma with hints of lemon.

• A splash Olive Oil: Extra virgin works best, it’s silky with a freshness to it.

Paprika, salt and pepper!

Add all ingredients in a food processor:

Add chickpeas, tahini, lemon juice, garlic clove, water (I use the water from the cooked chickpeas for flavor), cumin, olive oil, and salt and pepper, to a high-powered blender. Blend the chickpeas on high for 30 seconds, pause once or twice to scrape the sides down. If the hummus seems too thick, add a tablespoon or two of water.

If you do not have lemon, you can use orange, it gives a yummy taste too!

Decorate with some paprika or maybe some chopped coriander / parsley on top!
