CHOCO-frozen tea cake
Ingredients:
1 & 1/4 cup almonds or macadamia nuts powder (just process the nuts till powder).
lemon zest1 tsp coconut oil
2 tbsp. lemon juice1 tbsp.
honey1 & 1/2 cup dates60 gr dark chocolate (80%).
1 tsp. coconut oil.
Spices: cardamom + cinnamon + vanila essence (optional).
For the dough:1.Process the almond powder + honey + lemon zest + lemon juice all together.
2. Press down on an oven proof tin with your hands.
3. Put the dough in the oven for 10’ at 220*C.
For the date paste:1. In a boil add some hot water and cover the dates.
2. When soft peel and process with some of the water till it becomes a paste.
For the choco cover:1. Melt the chocolate first using a pot sumerge in hot water so you do not burn it.
2. Add the tbsp of coconut + 1 tsp. cinnamon + 1 tsp. cardamom + 1 tsp vanilla essence.
When the base is ready, add the date paste layer, and then the melted choco on top.
Let it cool down and then freeze for at least 30’ before cutting!
