CHOCO-frozen tea cake

Ingredients:

  • 1 & 1/4 cup almonds or macadamia nuts powder (just process the nuts till powder).

  • lemon zest1 tsp coconut oil

  • 2 tbsp. lemon juice1 tbsp.

  • honey1 & 1/2 cup dates60 gr dark chocolate (80%).

  • 1 tsp. coconut oil.

  • Spices: cardamom + cinnamon + vanila essence (optional).


    For the dough:

  • 1.Process the almond powder + honey + lemon zest + lemon juice all together.

  • 2. Press down on an oven proof tin with your hands.

  • 3. Put the dough in the oven for 10’ at 220*C.

    For the date paste:

  • 1. In a boil add some hot water and cover the dates.

  • 2. When soft peel and process with some of the water till it becomes a paste.

    For the choco cover:

  • 1. Melt the chocolate first using a pot sumerge in hot water so you do not burn it.

  • 2. Add the tbsp of coconut + 1 tsp. cinnamon + 1 tsp. cardamom + 1 tsp vanilla essence.

  • When the base is ready, add the date paste layer, and then the melted choco on top.

  • Let it cool down and then freeze for at least 30’ before cutting!
