Cauliflower rice

This cauliflower rice is full of healthy complex carbs, and ideal to surprise anyone with a summer lunch.

It takes 10’ to prepare, so give it a go!

INGREDIENTS:

  • 1 cauliflower head

  • 1 egg (optional)

  • 1 zucchini

  • himalayan salt & black pepper

  • herbs like oregano, thyme, mint, coriander (optional)

  • lemon zest

  • olive oil

  • 1 garlic

STEPS:

  1. In a food processor, place the cauliflower in pieces (approx one cup) and1 zucchini cut into cubes (both raw and washed vegetables)

  2. Process until well chopped.

  3. Heat a pan with ghee or oil and add the zucchini and cauliflower

  4. Cook over medium heat, moving with a wooden spoon. Season to taste with your herbs, salt and pepper and the lemon zest.

  5. Finally add 1 egg and continue mixing for a few more minutes until the egg is cooked!
