Carrot Mayo
This Mayo goes amazing with veggie burgers, as a salad dressing or even as a cocktail dip.
It last in the fridge 3 days! Hope you like it!
Ingredients:
2 Carrots
1 Garlic (if you love them like me you can add 2)
3 Spoons of olive oil
1 Spoon tahini
1/2 Squeezed lemon
6 Walnuts
Splash of himalayan salt and pepper
Additional flavors: smoked paprika or turmeric
Steps:
Boil the carrots till tender (do not discard the water!).
Process all ingredients in a high speed blender.
Adjust flavor and consistency as desired. Add water or lemon or olive oil if needed.
