Avo Chill Soup
While most fruit consists primarily of carbohydrate, avocado is high in healthy fats.
Its a great snack as it does snot spike insulin (as all healthy fats), plus all the fiber it contains, makes you feel full for longer:
Avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals.
Per 100gr:
Vitamin K: 26% of the daily value (DV)
Folate: 20% of the DV
Vitamin C: 17% of the DV
Potassium: 14% of the DV
Vitamin B5: 14% of the DV
Vitamin B6: 13% of the DV
Vitamin E: 10% of the DV
It also contains small amounts of magnesium, manganese, copper, iron, zinc, phosphorous and vitamins A, B1 (thiamine), B2 (riboflavin) and B3 (niacin).
Avocado Chill soup:
Ingredients:
3 avocados
1 red onion
2 garlic cloves (optional)
1 lemon squeezed
2 tbsp of tamarind or soy sauce
1 cup coriander
olive oil
500ml of veggie stock
Steps:
Blend the avocados, with the onions, garlic, coriander and lemon juice.
Add the tamari sauce gently
add the stock till you get the proper consistency.(I like it creamy)
you can decorate with more coriander and a splash of olive oil or even some roasted seeds.
